Expert assessment: "Azerbaijan does not have high-quality bread"

Baku, Fineko/abc.az. Azerbaijan lacks quality control of primary grain which excludes possibility of qualitative bread production.

Expert of Independent Consumers Union Sanan Kerimov has reported that the reason is firstly rise of flour prices, the sack of flour currently costs AZN 18.

" I give a 100% guarantee that the country does not have qualitative bread. Besides the fact that flour prices have run high, the grain is not processed well enough. Farmers gather and conduct initial processing of grain but it is not enough to get qualitative grain. The country has no agencies responsible for relevant grain processing and its quality control, although there is State Grain Fund. To get qualitative flour, enabling to produce qualitative flavored bread with lustrous crust, it should meet adopted standards, according to which 130 kilos of bread should be baked from 100 kilos of flour. Currently, initially low flour quality rules out possibility to get 130 kilos of bread from 100 kilos of flour and the producers have to violate set bread baking standards normatives, increasing water ands salt proportions in dough up process to compensate initially lacking 30 kilos of bread ",- he noted.

According to the expert, to achieve qualitative production output and provide food safety, one needs for install raw material quality control system and train specialists in this field.
